American Ginseng Chicken
(or Pork Rib) Soup

Ingredients:
American ginseng, chicken thighs (or pork ribs), ginger slices, red dates (pitted), goji berries, white lotus seeds, water, salt.
Instructions:

Cut the chicken into pieces. Blanch in boiling water to remove blood and impurities. Remove and set aside.

Place the chicken, American ginseng, ginger slices, red dates, and lotus seeds into a stew pot. Pour in enough hot water to fully cover the ingredients.

Put the pot into a steamer or slow cooker. Stew for about 1 to 1.5 hours. Before serving, add goji berries and season with salt to taste.
Tip: You can use a fat separator to remove excess oil for a lighter and healthier soup.


American Ginseng, Red Date & Goji Berry Tea

Ingredients: American ginseng slices (3–5 pieces), red dates (3 pieces), a small handful of goji berries, 500 ml hot boiling water.
Instructions:

Place all ingredients into a thermos or heatproof container.

Pour in the hot boiling water.

Cover and let steep for about 20 minutes.

Drink warm. You can refill with hot water and steep up to 3 times.
Tip: For a milder taste, reduce the amount of ginseng; for a sweeter flavor, add an extra red date.
Rock Sugar Red Date & Goji Berry Stewed Bird’s Nest

Ingredients: Bird’s nest (1 piece, about 5–9 g), red dates (3 pieces, pitted), a small handful of goji berries, rock sugar (to taste), 250 ml water.
Instructions:

Soak the bird’s nest until fully softened, then tear it into thin strands.

Place the bird’s nest, red dates, goji berries, and water into a stewing pot.

Stew over indirect heat (double boiling) for 30–40 minutes.

Add rock sugar and continue heating until it dissolves. Serve warm.
Tip: Avoid over-stewing the bird’s nest to maintain its delicate texture.


Papaya Coconut Milk Stewed Bird’s Nest

Ingredients: 1 piece of bird’s nest, 1/2 papaya, 50 ml coconut milk or fresh milk, Rock sugar (to taste).
Instructions:

Peel the papaya, remove the seeds, and cut it into chunks.

Place the bird’s nest and papaya into a stewing pot. Add an appropriate amount of water and stew for about 25 minutes.

Add the coconut milk (or fresh milk) and rock sugar, then continue stewing for another 5–10 minutes. Serve warm.
